Avocado Cucumber And Onion Bar Sandwich |

This is a wonderful fresh tasting vegetarian option on a modern and delicious bar/club sandwich. Quick, easy and lo-cal! Ingredients:
2 slices of any kind of wholemeal bread (i like 'seeded batch' with plenty of added whole-grains but use whatever you please) |
1 avocado, halved, stone removed |
1 medium sized onion - finely diced |
4oz of diced cucumber |
1 or 2 cloves of minced garlic |
2 slices of any medium tasting cheese - typically cheddar - but any similar will do |
1/3rd of a tspn of cayenne pepper |
a pinch of salt |
a few drops of lemon or lime juice |
Directions:
1. Place avocado, garlic, onions, cucumber, juice and pepper in a bowl and mash to a rough lumpy paste. 2. Reach for your bread - lightly toast if desired 3. Spoon out mixture on each half on a piece of bread 4. Add a slice or two of cheese 5. Put the two slices together 6. Slice the round into two pieces or pieces as desired 7. Eat! |
