Avocado, Corn and Tomato Salad |

This is a wonderful, quick salad to make anytime. I usually serve it at cookouts or BBQs. Or, I just make it for myself because it is so easy and tasty! For a variation on this recipe you can add a little feta cheese! Or you don't have to add the Balsamic Vinegar at all, because the flavors naturally taste so good together. Ingredients:
3 ripe avocados |
1 (15 1/4 ounce) bag frozen corn kernels |
3 roma tomatoes |
1 -2 teaspoon balsamic vinegar |
1 teaspoon lemon juice |
salt and pepper |
Directions:
1. Allow corn to thaw. Slice avocados in half and remove pit. Slice avocado into cubes or small chunks. Cut tomatoes into small chunks, discarding the seeds and pulp. Mix all ingredients together. Allow to chill for about 30 mins before serving. |
