1 cup sugar |
1/2 cup butter |
2 eggs |
1 cup mashed avocado |
1/2 cup buttermilk |
1 tsp baking soda |
1 1/2 cups all-purpose flour |
1/2 tsp nutmeg |
1/2 tsp cinnamon |
1/2 tsp allspice |
1/2 cup raisins |
1/2 cup chopped walnuts |
lemon sauce |
1 cup water |
1/3 cup sugar |
1 tbs cornstarch |
2 tbs butter |
1 tbs lemon juice |
1/2 tsp vanilla extract |
Directions:
1. Preheat oven to 350 degrees 2. Cream sugar and butter, add the 2 eggs and avocado and mix well. 3. Add the baking soda to the buttermilk and add to the batter. 4. Add spices to flour and add to the batter all at once and mix well. 5. Dust the raisins and walnuts lightly with flour and add to the butter 6. Pour into well-greased Pyrex pan (8 x 10 ) and bake for 35-40 minutes. (This can be stored or frozen. 7. Serve with a lemon sauce. 8. Lemon Sauce: 9. Boil until clear and serve warm over cake. |
