Avocado, Blue Cheese and Bacon Filling/Sauce |

Before I was veggie/vegan I loved this. Now I just make it veggie with veggie bacon. My husband loves this too. Put it in sandwiches with pasta or on potatoes. It's a bit addictive and not for those on a diet. Adding a bit of rocket to this tastes nice and it means you have included a vegetable with your fat for the day (that makes it healthy)! Ingredients:
4 slices bacon |
50 g blue cheese |
1/2 lemon, juice of |
1 avocado, sliced |
salt and pepper |
Directions:
1. Cut your avocado in half; remove stone and slice. 2. Squeeze lemon juice over avocado. 3. Dry fry bacon in frying pan until crisp, snip into slices approx 1 cm wide. 4. Cut up and crumble the danish blue. 5. Mix all of the above together and season with salt and pepper. 6. Mix with hot or cold pasta,, roughly tumble onto a sandwich or put in a potato. |
