Avocado and Tomato Salsa (Great With Fish or Chicken) |

This salsa is great with most white fish or chicken. It's very fresh, healthy and great in the summer. Ingredients:
1 avocado |
15 grape tomatoes |
1 lime |
1 1/2 tablespoons cilantro, chopped |
salt |
Directions:
1. Cut the avocado lengthwise, remove stone (pit). 2. Cube the avocado into 3/4 inch cubes. To do this take one half of avocado in the skin and gently cut through the length of the avocado but not through the skin, then do the same through the width. 3. Take a spoon and scoop out the flesh. 4. Squeeze the juice of 1 lime over avocado to prevent browning. 5. Cut tomatoes in half and add to mix. 6. Chop cilantro, I prefer it to be a rough chop. 7. Season with salt to taste and toss gently. 8. Serve over chicken or fish (preferably grilled fish). |
