Ingredients:
3 tablespoons lime juice |
salt and pepper |
1/4 cup olive oil |
2 navel oranges, peeled, sectioned and white pith removed |
2 ripe but firm avocados, peeled, pitted and cut into 1/2-inch pieces |
1/2 small red onion, thinly sliced |
6 cups baby spinach or arugula, washed and dried well with a salad spinner or paper towels |
Directions:
1. Make dressing: Whisk lime juice, salt and pepper in small bowl. Slowly whisk in olive oil until well combined. 2. Place orange sections, avocados, onion and spinach in a large bowl and drizzle dressing on top. Toss gently to coat. Serve immediately. |
