Creamy avocado and crabmeat, with a herbed dressing served with your favorite crackers or bread make for a nice start to the evening. And.. no cooking involved. Ingredients:
2 avacados |
lemon juice (to brush avacados) |
1 (8 oz) package crabmeat, drained and flaked |
1/4 cup finely chopped celery |
1/4 cup mayonnaise |
1 tsp lemon juice |
1/4 tsp salt |
1/8 tsp pepper |
dash-hot sauce |
2 cups shredded ice burg lettuce |
2 hard boiled eggs, sliced |
4 anchovy fillets (optional) |
1 ripe tomato, cut into wedges |
1 lemon, cut into wedges |
handful kalamata olives |
parsley sprigs |
herbed-mayonnaise dressing |
1 cup mayonnaise |
3 tbsp tomato puree |
3 tbsp chopped chives |
18 tsp dried whole chervil |
1/8 tsp dried whole tarragon |
Directions:
1. Herbed Mayonnaise Dressing: 2. Combine all ingredients, stir well, yields 1-1/4 cup; 3. Cut avocados in half lengthwise, remove seeds, and peel. Brush with lemon juice and set aside. 4. Combine crabmeat, celery, mayonnaise, 1 tsp lemon juice, salt, pepper, and hot sauce, then mix well. 5. Fill avocados with the crabmeat mixture. 6. Place lettuce on a serving platter. 7. Arrange avocados, eggs, anchovies (optional), with the tomato wedges, olives, and parsley sprigs on the lettuce. 8. Serve with cracker, or toast, and the Herbed-Mayonnaise dressing. |
