This light salad is quick and easy to prepare and BIG on taste! I just had this at a friend's house today and it was soooo yummy! Ingredients:
2 ripe haas avacadoes |
2 large ripe tomatoes |
3 fresh basil leaves - finely chopped |
1 fresh sprig of cilantro - finely chopped |
3 tbs olive oil |
juice of half of a fresh lime. |
salt to taste |
Directions:
1. Remove skin and nut from avacado and dice into bite sized pieces. 2. Remove core and dice tomatoes into bite sized pieces. 3. Finely chop basil and cilantro. 4. Add all to a bowl, add lime juice and combine with olive oil and salt to taste. 5. Store in refrigerator for at least half an hour for flavors to combine. 6. Enjoy! 7. ***As suggested below: Add 10-12 (41-50 count) shrimp cut-up into bite sized pieces and 1/2 cup red onion for a more jazzier version of the great salad!
