I came up with this baby during the first season of the show Big Love . I couldn't get enough of either one and everytime I sat down to watch it I would make this. I started calling it my Big Love dip. Haha I know. Read more ...I'm a dork. :) Ingredients:
avacado |
salt (to taste) |
cracked pepper (to taste) |
dill weed 1/4 teaspoon |
1-2 tablespoons of mayo |
2 teaspoons tabasco sauce more or less for the level of heat you like (i like texas pete sauce) |
1/4 cup fine chopped red onion |
1/2 cup frozen corn (off the cobb) |
tortilla chips |
Directions:
1. Bring your corn to a boil on the stove then set aside 2. Pit and scoop your avacado out then mash it up 3. add your salt,pepper,dill, mayo and tabasco then mix it well 4. add your onion and drained boiled corn and mix again 5. Serve warm with tortilla chips 6. P.S. Sometimes I add black beans to this and it's just as yummy 7. You can also add more or less mayo depending on the consistency you like. This is best served warm ( the boiled corn drained at the last minute and added to the mix warms it up! 8. Double it up to make more servings. |
