Autumn Yam and Peanut Soup |

A nice soup for fall. Ingredients:
1 teaspoon oil |
1 cup onion, chopped |
1 teaspoon ground cumin |
1 lb yam, peeled and cut into chunks |
1 large green apple, peeled and cut into chunks |
1 (14 1/2 ounce) can chicken broth |
1 (6 ounce) can apple juice |
1/8 teaspoon cinnamon |
salt and pepper |
1/2 cup creamy peanut butter |
Directions:
1. In large saucepan over medium heat, heat oil. Add onions and cumin. Cook until onion is translucent, stirring occasionally. 2. Add yams, apple, broth, apple juice, cinnamon, and salt and pepper to taste. Cover and bring to a boil. Reduce heat and simmer for 20 minutes, or until apples are tender. Add peanut butter. Stir until melted. 3. Ladle into blender in batches if nessesary and blender until smooth. Return to pan. Heat through. 4. To serve, ladle into bowls. Garnish with sour cream, chopped peanuts, and apple slices, if desired. |
