Autumn White And Green Bean Soup |

Full of veggies and beans, great source of fiber and good proteins from beans. Contents tummy and soul. Ingredients:
4 tbsp olive oil |
2 garlic cloves |
2 leeks |
2 green onions |
3 carrots |
1/2 pound green beans |
1 pound cabbage |
1 can white beans |
2 cups vegetal broth |
1/2 pound fresh spinach leaves |
1 tsp sweet paprika |
1 tsp hot paprika |
2 tbsp fresh parsley |
olive oil for drizzle |
Directions:
1. In a shallow pan heat olive oil and add garlic, leeks and onions till transparent. Do not brown. Add chopped carrots, beans and cabbage. Bring to a boil and then add the white beans. 2. Let simmer for 20 minutes or until veggies are tender but firm. Test salt. 3. Add spinach and paprikas. Mix well. Boil 5 more minutes. Set aside. 4. Serve the soup in bowls, adding fresh parsley and a little olive oil on top. |
