These are a little invention which happened after hunger struck this evening! My scones are a little rustic looking as I'm living away for a few weeks and have no rolling pin, cutter, scales, oven shelves.....you get the point. Read more . Great for the cold mornings as a breakfast snack. Ingredients:
about 8 ounces of pumpkin, cubed, boiled and mashed |
2 cups self raising flour |
1/2 teaspoon ground cumin |
1/4 teaspoon ground allspice |
1/4 cup brown sugar |
2 ounces butter |
1 egg |
2 ounces grated cheese |
Directions:
1. 1. Cream together the butter and sugar, and mix with the egg. 2. 2. Sieve the flour and spices into a bowl. 3. 3. Combine all ingredients together. 4. 4. Either roll out and use a cutter to make 8 scones, or roll into 8 balls as I had to! 5. 5. Bake at 200C for about 15 minutes, until the tops start to brown. 6. Serve warm with plenty of butter! |
