This easy recipe makes a big batch of delicious, healthy muffins which look and smell wonderful! Ingredients:
2 cups quick oats |
1 cup whole wheat flour |
1 cup unbleached flour |
3/4 cup sucanat or 3/4 cup brown sugar |
4 teaspoons baking powder |
1 teaspoon salt |
1 teaspoon ginger |
1/2 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/4 teaspoon clove |
2 cups low-fat milk |
2 eggs, beaten |
1/4 cup unsweetened applesauce |
2 tablespoons olive oil |
1 cup dried currant (optional) |
Directions:
1. Stir together dry ingredients. 2. Make well in center; add milk, eggs, applesauce, oil, and currants (if using) and stir to combine. 3. Spoon into greased muffin cups and bake at 375 degrees for 15-25 minutes, until muffins test done. 4. Remove from pan and cool on rack. |
