Autumn Oatmeal Muffins

This easy recipe makes a big batch of delicious, healthy muffins which look and smell wonderful!
Ingredients:
2 cups quick oats
1 cup whole wheat flour
1 cup unbleached flour
3/4 cup sucanat or 3/4 cup brown sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon clove
2 cups low-fat milk
2 eggs, beaten
1/4 cup unsweetened applesauce
2 tablespoons olive oil
1 cup dried currant (optional)
Directions:
1. Stir together dry ingredients.
2. Make well in center; add milk, eggs, applesauce, oil, and currants (if using) and stir to combine.
3. Spoon into greased muffin cups and bake at 375 degrees for 15-25 minutes, until muffins test done.
4. Remove from pan and cool on rack.
