Served as a savory 'cocktail' at your next autumn-themed party, these veggie, mashed potato, and sausage dishes with fresh herbs make great appetizers! Ingredients:
1 (24 ounce) package bob evansĀ® original mashed potatoes |
1 cup bob evansĀ® original roll sausage, cooked and crumbled |
2 cups cubed butternut or acorn squash |
1 zucchini, cut into 1/2 inch slices |
1 tablespoon olive oil |
1/4 cup sliced kalamata olives |
1 tablespoon capers, drained |
1 tablespoon minced basil and parsley |
2 tablespoons shredded parmesan cheese |
Directions:
1. Preheat oven to 425 degrees F. Place squash and zucchini on a rimmed baking sheet and toss with oil. Roast for 15 to 20 minutes or until tender and browned. Remove from oven and stir in olives, capers and herbs. 2. Prepare Bob Evans Original Mashed Potatoes by following recommended microwave instructions on the package. 3. Place 1 tsp. of vegetables into each martini glass. 4. Place about 1/4 package (6 oz.) of mashed potatoes on top of vegetables. 5. Top mashed potatoes with 1/4 of cooked vegetables. 6. Place 1/4 cup crumbled sausage over vegetables and sprinkle each with 1/2 Tbsp. Parmesan cheese. |
