This is a wonderful way to serve sweet potatoes and cranberries at your Thanksgiving or Christmas dinner. Serve as a side dish, or like me save it for dessert. Easy and delicious. Ingredients:
2 -3 medium yams |
2 medium apples, cored but not peeled. |
3 cups cranberries |
1 -1 1/2 cup raisins |
1 -1 1/2 cup walnuts or 1 -1 1/2 cup almonds |
cinnamon |
ginger |
2 -3 tablespoons maple syrup |
1/2-1 cup cider or 1/2-1 cup water |
pumpkin seeds |
Directions:
1. Bake yams in a pan until they're just soft about 60- 75 minutes at 350 degree. 2. Let yams cool and then peel them. 3. Slice layers of yams into a greased caserole dish- then add a few cranberries. 4. Slice an apple (cored, but leave skin on) into the dish, then sprinkle with ginger and cinnamon, add some raisons and nuts. 5. Another layer of apples, spices, nuts and raisons. 6. The last layer is yams again with cranberries sprinkled all around. 7. Pour a couple tablespoons of maple syrup over top then about 1/2 cup of cider or water. 8. Bake covered 300 degrees for 45-60 minutes. |
