Autum Grain Salad

A colorful, earthy grain salad.
Ingredients:
1 tablespoon extra virgin olive oil
1 cup diced butternut squash
1/2 cup diced red onion
1/2 cup diced yellow bell pepper
1/4 cup toasted sunflower seeds
1/2 teaspoon kosher salt
1/4 teaspoon cracked black pepper
1 cup cooked wheat berries
1 cup cooked cracked bulger wheat
1 cup chopped green beans, blanched
3/4 cup sliced kalmata olive
1 granny smith apple, diced
1 tablespoon lemon juice
2 tablespoons white wine vinegar
Directions:
1. In a large saute pan over medium heat add the olive oil and butternut squash.
2. Saute for 3 to 4 minutes stirring often.
3. Mix in the onion, bell pepper and sunflower seeds.
4. Saute for 3 to 4 minutes.
5. Remove from heat.
6. Season with salt and pepper.
7. Add remaining ingredients to pan.**.
8. Toss well.
9. Serve warm or at room temperature.
10. **After you dice your apple toss with lemon juice to prevent browning.
