Australian-Recipe Gingerbread |

This recipe is modified from one we found in an Australian cookbook. It is high in fat, but the spices make it delicious. Ingredients:
1 1/2 cups flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
2 teaspoons ground ginger |
2 teaspoons cinnamon |
1 teaspoon clove |
1/4 teaspoon grated nutmeg |
2 eggs |
1 cup sugar |
1 cup half-and-half |
1 teaspoon vanilla |
powdered sugar |
3/4 cup whipping cream |
1/4 teaspoon ground cinnamon |
1/4 teaspoon ginger |
1/4 teaspoon grated nutmeg |
Directions:
1. Preheat oven to 350°F. 2. Grease a 9 square baking pan. 3. Sift flour, baking powder, salt and spices into a bowl, set aside. 4. With an electric mixer, beat the eggs on high speed until very thick, about 5 minutes. 5. Gradually beat in the sugar. 6. With the mixer on low speed, beat in the flour mixture alternately with the cream, beginning and ending with the flour. 7. Stir in the vanilla. 8. Pour the batter into the pan and bake until the top springs back when touched lightly, about 35-40 minutes. 9. Let cool in the pan on a wire rack for about 10 minutes. 10. Combine whipped cream ingredients in a bowl and whip until the cream holds soft peaks. 11. Sprinkle powdered sugar over the hot gingerbread, cut into 16 squares, and serve with whipped cream. |
