Rice-flour pancakes my Auntie Janice would make for us when we visited her and my uncle out in BC. A lot less trouble on the digestive system, if you need to worry about that (like herself, me and my dad!) Ingredients:
1 1/2 cups brown rice flour |
1/2 cup corn starch |
4 tsp baking powder |
1/2 tsp baking soda |
2 tsp sugar |
2 tsp salt |
1 cup skim milk |
1 cup buttermilk |
1 egg |
Directions:
1. Combine dry and wet ingredients in separate bowls. 2. Stir wet ingredients into dry and blend well. 3. Cook in hot fry-pan until lightly browned. Serve hot. |
