from La Dolce Vegan. Ingredients:
1 (19 ounce) can chickpeas, drained and rinsed (garbanzo beans) |
1/4 small red onion, minced |
2 garlic cloves, minced |
1 large tomato, diced |
1/4 cup fresh parsley, finely chopped |
2 tablespoons olive oil |
2 tablespoons red wine vinegar |
1 teaspoon lemon juice |
1/2 teaspoon salt |
1/3 teaspoon pepper |
Directions:
1. In large bowl, toss all ingredients together. 2. Chill at least 1 hour before serving. 3. Makes 2 large or 4 small servings. |
