This recipe has been in our family for years, great at every holiday with every meat. It's even good as dessert! Can be made a day ahead of time.
Ingredients:
2 -16 ounces whole berry cranberry sauce
2 (3 ounce) packages raspberry jell-o gelatin
1/2 cup boiling water
2 tablespoons lemon juice
1/2 teaspoon salt
1 (11 ounce) can mandarin oranges, drained and cut into pieces
1 cup light mayonnaise
1/2 cup walnuts, chopped
Directions:
1. Heat cranberry sauce to boil, strain and set berries aside.
2. Bring juice to a boil again.
3. Add the hot water to cranberry juice, dissolve jello, and add lemon juice and salt.
4. Chill mixture until slightly thickened.
5. Use rotary beater and beat mayonnaise until light and fluffy - add to jello mixture.
