My Aunt Susie makes this and it is perfect for those hot summer days when the last thing you wanna do is turn the oven on. The first time I tasted it I was hooked! It's cool, fruity and creamy. Ingredients:
1 20 oz can pineapple tidbits and all juice (light syrup) |
1 15 oz can fruit cocktail and all juice (light syrup) |
1 11 oz can mandrin oranges drained |
2 small boxes of pistachio pudding |
1 cup of sour cream |
8 oz of cool whip (thawed) |
** if doubling recipe double everything except 12 oz cool whip |
** handfull fine chopped pecans for garnish if desired |
Directions:
1. Drain fruit and reserve 1 1/2 cups of juice 2. place unprepared pudding mix in large bowl and add the 1 1/2 cups of reserved juice and mix well 3. add sour cream and cool whip, mix well 4. Fold in fruit and let chill 5. Add pecans for garnish if desired |
