Aunt Ro's Coleslaw is unusual and very delicious. The rice vinegar make a smooth creamy dressing. Try it and you'll add it to you favorites. Ingredients:
3 cups shredded cabbage |
1 cup shredded carrot |
1/4 cup shredded purple onion |
1/2 cup mayonnaise |
1/2 cup sour cream |
1 tablespoon rice vinegar |
2 teaspoons sugar |
1/2 teaspoon celery salt |
1/2 teaspoon fine ground white pepper |
Directions:
1. I have no idea who Aunt Ro is but her slaw is exceptional and deserves her name. 2. Prepare the vegetables by slicing, shredding or grating very thin. 3. Toss the vegetable ingredients to mix well. 4. Prepare the dressing by whisking together the mayonnaise, sour cream, rice vinegar, sugar, celery salt and white pepper. 5. Fold the dressing into the tossed vegetables and refrigerate, covered, for at least 2 hours. 6. May be made ahead. Toss occasionally to keep the dressing distributed over the vegetables. |
