Aunt Pats Chocolate Zucchini Cake |

This is my Aunt Pat's recipe, and it's delicious. It has the consistency of a banana bread or coffee cake - and is a great way to eat your vegetables :) Ingredients:
2 c grated zucchini (peel first, if skin is tough) |
3/4 c oil |
2 c sugar |
3 eggs |
3 sq melted unsweetened chocolate or heaping 1/2 c cocoa powder + a little more oil & sugar |
1/2 c milk |
1 tsp vanilla |
2 1/2 c flour |
2 1/2 tsp baking powder |
1 1/2 tsp baking soda |
1 tsp salt |
1 tsp cinnamon |
chocolate chips or walnuts, if desired |
Directions:
1. Mix zucchini, oil, sugar, eggs, chocolate/cocoa, milk and vanilla. Add flour, baking powder, baking soda, salt, cinnamon and chocolate chips/walnuts (optional); mix until smooth. 2. Pour into greased Bundt pan and bake at 350 for 50-55 minutes 3. If using a 9X13 pan bake at 325-350 for 40-45 minutes |
