Bryan's Aunt Mame, who is 82 years old, makes this creamed corn in a butter sauce that is fantastic according to everyone that's eaten it! It's a guessipe, she never measures anything. I have used frozen niblet corn in the winter, and that works, too. Read more . 2 medium ears equal 1 cup of corn. Ingredients:
8 ears yellow corn, husked |
1 t all-purpose flour |
salt and freshly ground black pepper |
1 c heavy cream |
1/2 c cold water |
2 t bacon grease |
4 t butter or margarine |
Directions:
1. Cut kernels from the cob and set aside 2. Sitr together flour, salt and pepper 3. Combine with corn. 4. Add the heavy cream and water. Mix. 5. In a large skillet over medium heat, heat bacon grease and 2 T butter 6. Add corn mixture and turn heat down to medium-low, stirring frequently, until it becomes creamy, about 30 minutes. 7. Add the remaining 2 T butter right before serving. |
