Aunt Mabel's Snowflake Pie |

My aunt always made this for family get togethers and we always wanted to be the first in line when the desserts were brought out so we got some! Ingredients:
9 inches pie crusts, baked and cooled |
1 (1/4 ounce) envelope unflavored gelatin |
1/4 cup water |
1/2 cup sugar |
1/4 cup flour |
1/2 teaspoon salt |
1 1/2 cups milk |
3 egg whites |
1/4 teaspoon cream of tartar |
1/2 cup sugar |
1/2 teaspoon vanilla |
1/2 teaspoon almond extract |
8 ounces cool whip, thawed |
1 cup coconut |
Directions:
1. Soften knox gelatin in 1/4 cup water and let set. 2. Mix together in a saucepan the sugar, flour and salt. 3. Stir in milk; cook over low heat, stirring constantly until thick. Cook for 1 additional minute after mixture thickens. 4. Remove from heat, stir in gelatine mixture and cool. 5. Beat the 3 egg whites; add cream of tartar and the other 1/2 cup sugar. Beat until glossy. Add vanilla and almond extracts. 6. Fold in Cool Whip and coconut. 7. Put in baked pie shell and refrigerate. |
