Aunt Laura's Oklahoma Soup |

This recipe is one of my Aunt Laura's favorites. It is one of the recipes she gave me while I was compiling the family cookbook. It goes great with cornbread. Ingredients:
1 1/2 lbs ground beef |
1 large onion, chopped |
2 cloves garlic, minced |
1 (10 ounce) can tomato soup |
1 (15 ounce) can ranch style beans |
1 (10 ounce) can vegetable soup |
2 (15 ounce) cans mixed vegetables, drained |
1 (10 ounce) can ro-tel tomatoes |
2 cups water |
chili powder, to taste |
pepper, to taste |
Directions:
1. In a large skillet, brown ground beef with onions and garlic. 2. Drain meat mixture on paper towels. 3. To a large stock pot, add meat, tomato soup, Ranch Style beans, vegetable soup, mixed vegetables, Ro-Tel tomatoes and water. 4. Bring to a boil and add chili powder and pepper to season. 5. Reduce heat and let simmer about 30 minutes. 6. ~NOTE~Fresh or frozen vegetables may be used instead of canned. |
