Ingredients:
1 unbaked 9-inch pastry shell |
1 1/2 cups sugar |
1/3 cup butter or margarine, softened |
3 large eggs |
1 tablespoon grated lemon rind |
1/4 cup fresh lemon juice |
1/4 teaspoon salt |
1/2 teaspoon lemon extract |
Directions:
1. Line pastry shell with aluminum foil, and fill with pie weights or dried beans. 2. Bake at 425° for 7 minutes, and remove weights and foil. 3. Whisk together sugar and butter until blended. Whisk in eggs and remaining ingredients. Pour into piecrust. 4. Bake at 350° for 30 minutes or until set. Cool on a wire rack. |
