This is a from scratch recipe using dried beans. I found it handwritten on a very yellowed piece of paper. My husband thinks it's delicious! Ingredients:
1 lb dry white bean, soaked and rinsed |
10 cups water |
1 tablespoon oil |
1 medium onion, chopped |
1 1/2 teaspoons salt |
1 bay leaf |
1/4 cup molasses |
1/3 cup catsup |
1 tablespoon prepared mustard |
1 teaspoon worcestershire sauce |
1/2 teaspoon ground ginger |
4 ounces salt pork (i use bacon or ham) |
2 tablespoons brown sugar |
Directions:
1. Combine the soaked beans, water, oil, salt and bay leaf. Bring to a boil, then simmer until beans are tender. Add more hot water if necessary. 2. Drain, reserving 1 cup liquid. 3. Combine the 1 cup liquid with the remaining ingredients in a small bowl. 4. Pour over the beans in a casserole dish. 5. Cover and bake at 300 degrees F for 1 to 1 1/2 hours, adding more liquid if necessary so beans don't dry out. 6. This gets better with time-leftovers are great! |
