Another vintage recipe that my mother in law gave to me. The Parkers were pioneers in Arizona and a lot of these are family hand me down's. Cousin Gina's note at the bottom of the dog eared and stained card is this: (NB - add dry ingredients and banana alternatingly [sic] works better...) Ingredients:
1/3 cup shortening |
3/4 cup sugar |
2 eggs |
1 3/4 cups flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1 cup banana, mashed |
1 cup walnuts, chopped |
Directions:
1. Preheat oven to 350°F. 2. Mix shortening and sugar. 3. Add eggs and beat well until creamed. 4. Mix flour, baking soda, salt, and baking powder together. 5. Alternate adding dry ingredients, mashed bananas, and walnuts until well mixed. 6. Pour batter into well greased 9 x 5 loaf pan and bake 50 minutes. |
