This has been a staple at every family thanksgiving that I can remember. My aunt started the tradition and we just won't let her stop! It's easy to make but we generally leave it for a once a year indulgence. Ingredients:
3 large yams, cooked |
1/2 cup brown sugar |
1/2 cup granulated sugar |
1 beaten egg |
6 ounces canned evaporated milk |
1 teaspoon vanilla |
1/2 teaspoon maple flavoring |
1 dash salt |
1/4 cup butter |
3/4 cup brown sugar |
2 tablespoons flour |
1/2 cup butter |
Directions:
1. Preheat oven to 400°F. 2. Peel and mash the yams. 3. Mix in brown sugar, white sugar, egg, evaporated milk, vanilla, maple flavoring, salt, and butter. 4. Pour into greased baking dish (9 x 11 or 7 x 10 work best). 5. For the topping: mix together 3/4 cup brown sugar and 2 tbsp of flour. 6. Melt the 1 stick of butter, and pour onto the casserole. 7. Crumble the brown sugar and flour mixture over the top of the casserole. 8. Bake uncovered at 400 F for 30 - 45 minutes or until sides are brown and bubbly. |
