My great aunt's recipe from the depression-era, before they migrated from Nebraska to California. I use half white whole wheat flour and half regular whole wheat flour. It would also be good with whole wheat pastry flour. I love it because it's healthy, yet a nice treat! Ingredients:
2 cups whole wheat flour |
1 teaspoon cinnamon |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/4 teaspoon baking powder |
2 eggs |
1/2 cup honey |
1/3 cup unsweetened applesauce |
1/3 cup vegetable oil |
2 teaspoons vanilla |
1 1/2 cups zucchini, grated |
1/2 cup nuts |
Directions:
1. Grease two small or one large loaf pans and pour in batter. 2. Bake at 350 for 1 hour or until brown (check at 45 minutes – mine took 50-55 minutes). Put on rack to cool. 3. Enjoy! |
