Aunt Della's Chicken & Rice Casserole |

This is a little dry on top due to having to leave off the corn flake and margarine topping, but it's okay - and still one of my favorite casseroles. Ingredients:
2 cups chicken breasts, chopped |
1 t. olive oil, light |
1 cup celery, diced |
2 t. onion, chopped |
2 cups cooked brown rice |
16 ounce cream of chicken soup |
3/4 cup miracle whip light |
1/3 cup sliced almonds |
Directions:
1. Saute celery and onion in a little olive oil. 2. Mix chicken, celery, onion, rice, soup, Miracle Whip Light, and almonds together and pour into greased 2-quart casserole. 3. Bake 45 minutes at 375. |
