My mother swears by this pie, and I love it with ice cream on top when it's HOT out of the oven. You'll love this! Ingredients:
1 pillsbury pie shell |
1 1/3 cups coconut, shavings |
3 eggs (beaten) |
1 1/2 cups sugar |
1/2 cup melted butter |
4 teaspoons lemon juice |
1 teaspoon vanilla extract |
Directions:
1. Preheat oven to 350 degrees F. 2. Beat and combine all ingredients EXCEPT COCONUT. 3. Stir in coconut with spoon after smooth. 4. Pour mixture in unbaked pie shell. 5. Bake for 45 minutes. 6. (optional) Serve with Breyer's Vanilla Ice Cream. |
