This is a Mennonite recipe handed down to me from my mom. A rich, delicious cake with fruit, it's quick & easy to prepare. Works best with apricots or plums, but you can really use any fruit you like. Ingredients:
2 cups icing sugar |
1 cup butter, softened |
1 teaspoon vanilla |
3 eggs, slightly beaten |
2 1/2 cups flour |
4 cups apricots, halved |
sugar |
Directions:
1. Beat together the icing sugar, butter, vanilla, eggs and flour. The batter will be very thick. 2. Spread half of the batter in bottom of a greased 9 x 13 pan. 3. Lay fruit down on top. Sprinkle with a little sugar. 4. Cover with remaining batter. Bake at 350 degrees for 45 minutes or until baked all the way through. |
