Nummy breakfast bars with chocolate chips, raisins and walnuts. Great for a pick me up in the afternoon, too. But don't eat too many...
Ingredients:
1 cup brown sugar, loosely packed
1/2 cup white sugar
3/4 cup butter
1 egg (or 1/4 cup applesauce)
1/4 cup 1% milk
1 tsp. vanilla
2 3/4 cups quick oats
1/4 cup hodgson's mill multi-grain hot cereal
1 cup flour, unbleached
1 tsp. salt (optional)
1/2 tsp baking soda
6 oz. chocolate chips
4 oz. raisins
2 oz. walnuts, crushed
Directions:
1. Preheat oven to 350 degrees. Cream together sugars and butter.
2. When fully creamed add egg or applesauce, milk and vanilla. Blend this mixture well.
3. In a seperate bowl stir together the oats, cereal, flour, salt and baking soda.
4. Add wet mixture to dry mixture and mix well.
5. Mix in chocolate chips, raisins and walnuts when the dough is well mixed.
6. Spray a 9x13 pan with oil. Spread mixture into pan and bake for 25 to 30 minutes, until the edges are browned and top is golden. Remove from oven and allow to cool. Cut into 25 bars.
