My daughter Audrey always called this Carrot Stew as she loves the carrots in it, but really it is a beef/venison stew easily thrown together for the crockpot. Ingredients:
3 lbs boneless beef roast, cubed |
1 1/4 ounces dry onion soup mix |
28 ounces diced tomatoes |
2 tablespoons minute tapioca |
5 potatoes, diced |
1 onion, chopped |
8 carrots, chopped |
1 teaspoon sugar |
1 tablespoon salt |
1/2 teaspoon pepper |
1 tablespoon worcestershire sauce |
Directions:
1. Add everything to slow cooker (stir together) and cook on high 5 hours or low 9-10 hours. 2. I try to make sure all veggies are chopped about the same size for even cooking. 3. If I have a venison roast on hand, I substitute it in the recipe and no one knows! |
