basic pasta - I like it with taglietelle Ingredients:
75 g pasta |
1 eggplant, grilled |
1/2 oz pine nuts |
1 1/2 oz goat's cheese |
1 tbsp olive oil |
Directions:
1. boil water in large saucepan and add pasta - simmer whilst preparing sauce 2. heat a griddle and toast pine nuts - set aside 3. slice aubergine lengthways and brush with olive oil 4. put aubergine slices on griddle and cook till soft 5. chop up goats cheese 6. drain pasta and stir in goats cheese and pine nuts 7. server pasta, with aubergine slices on top |
