This is a delicious refreshing recipe perfect for summer.Is quick,cheap and easy but be careful because once you taste it you can't stop eating it! :) Ingredients:
2 aubergines |
2 fresh tomatoes |
1 onion |
1 tbsp salt |
200gr mayonnaise |
aluminium foil |
Directions:
1. Wrap each aubergine in foil the place in the preheated oven for 20-30 minutes or until they are soft (you can do the test with a fork). 2. Chop the onion very finely then put it in a bowl. 3. After the aubergines are ready,put them in cold water then peel the black skin off. 4. Chop the aubergines finely until they are like a paste(you can do this with a food processor too but i prefer to do it manually with a knife). 5. In the bowl with the onions,add the mayonnaise,aubergine paste and salt. 6. Chill in the fridge until cold. 7. The salad is sereved on bread with sliced tomatoes on top. 8. Bon appetit! |
