This is an awesome eggplant dip, bursting with so many great flavors. Enjoy Ingredients:
1/2 medium aubergine |
1 crushed garlic clove |
1-1/2 tablespoons tahini |
1/4 teaspoon fresh lemon juice |
1 tablespoon olive oil |
toasted sesame seeds |
Directions:
1. Preheat oven to 400 then bake aubergine 30 minutes until tender. 2. Cool slightly then peel and puree flesh in a blender or food processor. 3. Add garlic, tahini and lemon juice then process until mixed. 4. With motor running drizzle in oil to make a smooth paste. 5. Season to taste then transfer to a serving dish and garnish with sesame seeds. 6. Serve chilled with pita bread or toast points. |
