Au Gratin Roquefort Potatoes |

This potato dish serves 24, and is the perfect side dish with many meats. Great for buffets. Guests love it. Ingredients:
about 15 potatoes, peeled and thinly sliced |
3/4 cup unsalted butter, cut into small pieces |
salt and freshly ground black pepper to taste |
3 cups heavy cream |
4 ounces roquefort cheese, crumbled |
1/2 cup seasoned bread crumbs (i like to make my own) |
3 tablespoons butter for bread crumbs |
Directions:
1. Grease a large roasting pan with butter 2. Arrange the potatoes in rows, layering 3. Sprinkle with salt and pepper 4. Dot with butter over entire surface 5. Meanwhile, in pan on stove, bring the cream just to a boil 6. Stir in the cheese, cook over high heat, constantly stirring until cheese melts 7. Season with a little salt and pepper 8. Pour the cream mixture over the potatoes 9. Cover the potatoes tightly with aluminum foil 10. Bake for 1 hour and 30 minutes 11. Meanwhile in bowl, place seasoned bread crumbs with 3 tablespoons melted butter, toss to coat and have ready 12. Remove potatoes from oven, removing foil *carefully* 13. Sprinkle buttered breadcrumbs over entire surface of the potatoes 14. Set the pan under broiler until the top is golden brown 15. Let stand for about 10 minutes 16. Can cut into even sized squares when ready to serve |
