This recipe is from the back of a box of store-brand au gratin potatoes. Though it's certainly not homemade potato soup, it's a quick way to make a small amount of potato soup. Portion sizes are as a side dish, if it is the main dish I would say it only serves 3-4. Ingredients:
1 box au gratin potato mix (cheese sauce mix included) |
1 can chicken broth (regular size 10 - 10 1/2 ounces, not large) |
3 cups water |
2/3 cup diced carrots |
2/3 cup diced celery |
1/2 cup light cream |
Directions:
1. In a large saucepan, mix together the potato slices and cheese sauce mix from the au gratin potato package, along with the chicken broth, water, carrots and celery (everything EXCEPT the cream). 2. Stir occasionally while bringing to a boil. 3. Reduce heat to medium low or low (depends upon your burners). 4. Cover and simmer 25-30 minutes. 5. Stir occaisionally during cook time . 6. Soup is done when potatoes are tender. 7. Remove from heat and stir in cream. |
