Assorted Tomatoes Pico My Way |

This is the way I do my pico. It's fresh, delicious, uses up some of those extra tomatoes from the kitchen window and truly compliments a taco salad, Mexican meal, or anything slightly spicy. Enjoy! -Kn0x- Ingredients:
6-8 medium tomatoes--red, yellow, peach, early girls or whatever you have |
1/2 cup red onion |
large handful cilantro |
1 medium jalapeno |
1 teaspoon salt |
3 tbs. vinegar |
1 tbs. lemon juice |
1/2 tsp. black pepper |
1 tsp. garlic, finely minced |
Directions:
1. Seed tomatoes well, chop into small pieces. 2. Finely dice red onion, then seed and finely dice/mince the jalapeno. 3. De-stem most of the cilantro, chopping finely. 4. Place all into a glass mixing bowl, and top with the other ingredients. 5. Toss well, cover and refrigerate for a couple hours before serving. 6. Toss well again before serving. 7. Enjoy! |
