From the village of Olympi on the island of Chios. Adapted from The Food of the Greek Islands. 1/4 cup crushed red pepper flakes and 3 tablespoons paprika may be substituted for the Aleppo pepper. Ingredients:
7 tablespoons aleppo pepper |
1/4 cup dried oregano |
2 tablespoons fennel seeds (crushed or ground) |
2 tablespoons dried orange zest |
1 tablespoon dried basil |
1 tablespoon dried mint |
Directions:
1. Combine all ingredients. 2. This will keep up to 6 months in a sealed jar in a cool dark place. |
