~ This is a dish that always made me think..Fall..gravitate to it each year about this time to prepare ~
Ingredients:
1 head garlic...about 14 cloves
olive oil
2/3 cup mayonnaise
1/2 cup fresh parsley,chopped
1 tablespoon greek seasoning
4 cans whole kernel yellow corn,drained
2 cups sweet red pepper,chopped
1 1/2 cups green onions,chopped...with the tops..may add some red onion for part of this...just to add more color.
1/2 pound bacon,cooked and crumbled
Directions:
1. Trim the garlic head on top,drizzle with a small amount of Olive Oil.
2. Wrap in foil,and roast in a 400 degree oven for 1 hour,this will render it rich and sweet.
3. Cool completely.
4. Press the garlic pulp out of each clove and mash in a bowl.
5. Add Mayonnaise(I like Miracle Whip..but some people don't),parsley,Greek seasoning.
6. Stir until well combined.
7. In bowl,place corn,red pepper,green onions,then toss gently with the garlic dressing.
8. Cover and chill for at least 3 hours.
9. When ready to serve,stir in the cooked crumbled bacon...and if you would like,some small cubes of Pepper Jack Cheese.
10. ~ When the chill is in the air and you have been out among Gods Crayon Box of Color,this is nice to set down to, with Fried Pork Chops,Mushroom Gravy,homecanned mocked Cinnamon Apple Rings...and a shot of Louis XIII would'nt be bad either...Enjoy,lifes pleasures ~
