Asparagus With Tomatoes And Shallots |

A simple and easy recipe that is absolutely delicious. It takes more time to prep than cook. :) Ingredients:
2 tb butter |
1 pound asparagus, trimmed and cut into pieces |
1 shallot, minced |
2 c. ripe tomatoes, peeled and chopped |
1 tb parsley, chopped |
1 tsp. lemon juice |
Directions:
1. In a heavy skillet, melt butter over medium heat. Saute asparagus for 2 minutes. Stir in shallot, tomatoes, parsley and lemon juice. Cover and simmer 3 to 4 minutes until asparagus is tender. |
