Asparagus with Lemon Butter |

This is a nice, simple side dish for dinner, or for brunch. Ingredients:
salt |
1 1/4 lbs fresh asparagus, cut into 1 inch pieces |
2 teaspoons butter |
2 teaspoons seasoned rice vinegar |
1 teaspoon minced lemon, zest of |
Directions:
1. Heat salted water to a boil in a large saucepa. 2. Add asparagus; cook just until tender, about 5 minutes, depending on size. 3. Drain well, shaking to remove all water. 4. Transfer to a serving bowl; lightly toss with butter, vinegar, lemon zest, and salt to taste. |
