ASPARAGUS WITH CRUNCHY ORANGE TOP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993. Ingredients:
1 pound fresh asparagus with ends cut off |
1 teaspoon butter |
1 1/2 tablespoons almonds chopped |
1/4 cup orange marmalade |
Directions:
1. Arrange asparagus in a vegetable steamer over boiling water. 2. Cover and steam 4 minutes until crisp tender. 3. Drain and arrange on a serving platter and keep warm. 4. Melt butter in a small saucepan over low heat then add almonds and sauté until lightly toasted. 5. Stir in marmalade and cook until heated then spoon over asparagus. |
