Asparagus With Creamy Sesame Dressing |

This can be served as a first course or a side dish. Serving it cold means it can be prepared well in advance. Ingredients:
1 1/2 lbs asparagus, trimmed |
2/3 cup nonfat yogurt |
2 tablespoons lemon juice |
1 tablespoon sesame oil |
4 tablespoons chopped parsley or 4 tablespoons cilantro |
1/4 cup chopped walnuts, toasted if desired |
Directions:
1. Steam or microwave asparagus until just tender, cool. 2. Whisk yogurt with lemon juice and sesame oil. 3. Stir in parsley or cilantro. 4. Add salt and pepper if desired. 5. Serve asparagus with the dressing. 6. Sprinkle walnuts on top. |
