This dish can be grilled indoors on the foreman anytime of year or in a grill pan. We love it! Ingredients:
fresh asparagus |
green bell peppers |
red bell peppers |
purple onion |
1 tbs balsamic vinegar |
1/2 teaspoon lemon juice |
2 tbs olive oil |
salt and pepper to taste |
Directions:
1. chop all veggies to bite size pieces. mix together vinegar, lemon juice, oil and salt and pepper. add to veggies. let marinate in fridge for 30 minutes. Remove from fridge and using tongs place veggies on foreman grill/grill pan/outdoor grill on foil 2. cook till veggies are tender but still crisp. |
