This is a delicious torta that is easy to make. Ingredients:
2 lbs asparagus, cleaned and trimmed |
6 eggs |
1 tablespoon virgin olive oil |
1 teaspoon salt |
1/4 teaspoon pepper |
1 cup seasoned bread crumbs |
2 tablespoons virgin olive oil |
Directions:
1. Preheat oven 375 degrees. 2. Oil bottom and sides of 8x8x2 pan with 2 Tbsp olive oil. 3. Cook asparagus until tender & let cool. 4. Cut asparagus into small pieces. 5. Beat eggs with 1 Tbsp olive oil, add asparagus, salt & pepper, mix well. 6. Pour into prepared pan & drizzle a little olive oil on top. 7. Bake approximately 45 minute. 8. Should be nice & brown, Cool & cut into squares to serve. |
